| 1 whole | white onion, peeled |
| 1 whole | carrot, peeled |
| 2 stalks | celery |
| 1 | whole chicken |
| 2 pounds | beef bones |
| 2 pounds | beef shoulder |
| to taste | salt |
| 8 cups (2 quarts) | water |
PLACE the ingredients for the broth in a large pot, cover with cold water and bring to boil.
SIMMER for about three hours, skimming foam from the top every once in a while.
STRAIN the broth using a fine colander.
BRING two quarts of broth to boil, add Pastina and cook according to the directions.
SERVE very hot in a soup bowl.
