Fiori with a Sun Dried Tomato Sauce White Beans, Broccoli and Pressed Ricotta Cheese

Ingredients

1 boxBARILLA Fiori
3 tablespoonsolive oil
2 clovesgarlic, chopped
½ cupwhite beans (canned)
1 large bunchfresh broccoli
½ cupsun dried tomatoes, julienne
1 cupchicken stock
½ cupwhite wine
2 tablespoonsfresh parsley
to tastesalt
to tastefreshly ground black pepper
½ cuppressed ricotta cheese


BRING a large salted pot of water to a boil.
SAUTÉ garlic and olive oil in a large skillet until garlic becomes golden yellow.
SLICE broccoli stems thin and add stems and florets to the skillet; sauté for 3 minutes.
ADD white beans and sun dried tomatoes to the skillet; sauté for 2 minutes.
ADD white wine and continue cooking until liquid is reduced by three-fourths. Add chicken stock and cook until liquid is reduced by half. Season with salt and pepper and sprinkle in parsley
COOK Fiori according to the package directions. Drain and add to the sauce mixture. Toss well
TOP with pressed ricotta cheese before serving.
