Ingredients for 4 people


8 slices of Tuscan bread (with no salt)
½ cup white wine vinegar
Oil for frying
as needed
2 pounds mussels
3 ½ tablespoons dry white wine
1 clove garlic
1 hot red pepper
2 bay leaves
1 sprig parsley
½ cup extra virgin olive oil

Preparation 20 minutes preparation + 10 minutes cooking

Wet bread slices with a few drops of vinegar, let dry a few minutes on a clean towel and fry in enough hot olive oil to cover (check oil temperature by dropping in a piece of bread).

When golden brown and crisp, remove with a slotted spoon and drain on paper towels.

Scrub mussels with a brush, cut or scrape off beard and wash well.

Put in a pan, cover and let mussels open over high heat.

Drain and remove the valves. Set cooking juices aside.

In a pan, fry garlic and hot red pepper in extra virgin olive oil, add mussels, ½ cup of cooking juices and bay leaves.

Cook for five minutes over high heat, add wine and allow to evaporate.

Stir in chopped parsley. Arrange two pieces of fried bread on every plate, ladle the mussels with their cooking juices over them and serve.
