Ingredients for 4 people


1 Box Barilla Penne
4 tbs Olive oil
2 ea diced Roasted red Bell Peppers
½ cup chopped Sun Dried Tomatoes (in oil)
3 cups Baby Arugula
2 balls diced Sorrento Mozzarella (fresh)
Salt to taste
Black pepper to taste
Lemon juice of ½ lemon
4 leaves Basil


Ingredients

Preparation minutes preparation + minutes cooking

Bring a large pot of water to a boil.

Season water with salt and cook pasta 1 minute under required cooking time as indicated on the box.

Drain and toss with 1 tbsp olive oil, place on sheet tray to cool down.

Once cool, place in a large bowl and add all remaining ingredients.

Toss to combine.

Let rest for 30 minutes for flavors to meld.
