10 ½ ounces very fresh anchovies
Juice of 1 lemon to taste
Extra virgin olive oil as needed
Salt to taste
Vinegar to taste
chopped oregano to taste

Preparation 20 minutes preparation + 0 minutes cooking

Clean and bone anchovies, wash under cold running water and dry thoroughly.

Arrange anchovies in a bowl and dress with plenty of lemon juice, a pinch of salt, a dash of vinegar and a pinch of chopped oregano.

Marinate the fish for 24 hours.

Drain and arrange on a serving platter.

Drizzle with extra virgin olive oil.
