Our chef will show you how to thicken a sauce using pan drippings.
 




Ingredients for 4 people


demi-glace or pan drippings
starch
water


Preparation

Puree the drippings from a roast in a blender. Then strain through a sieve directly into a saucepan.

Place over medium heat and, in the meantime, stir the starch with a little water.

As soon as the sauce comes to a boil, add two or three tablespoons of the starch and water mixture.

Stir the sauce with a spoon and continue adding starch until the sauce reaches the diesired thickness.
