How to make choux pastry dough

Round balls of dough baked in the oven, beignets made of choux pastry are certain to please.




Ingredients for 4 people


1 cup water
3.5 oz butter
a pinch of salt
1 1/3 cup flour


Preparation

Pour water into a small saucepan, add butter and a pinch of salt and put on heat so that the butter melts in the water.

When the water begins to boil, gradually stir in sifted flour and continue stirring until you have a smooth batter.

Continue cooking, stirring until the batter easily detaches from the side of the pan.

Then, transfer it to a bowl and let cool to room temperature.

When the batter has cooled, add the eggs one at a time, mixing until soft, smooth and not too runny. Line a baking sheet with waxed paper and fill a pastry bag with the batter.

Squeeze spirals of batter on the baking sheet, 2 inches from one another.

Bake the dough in a preheated oven at 400°F (200°C) for 15 minutes until the beignets are smooth and light.
